  • 1 cup Medjool dates, pitted Make sure your dates are soft to help everything blend well.
  • 1 cup dried cherries Dried cherries provide the right texture and sweetness.
  • 1/2 cup unsweetened cocoa powder
  • 1 cup nuts (walnuts or almonds) Experiment with different nuts for your favorite flavor.
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • as needed Shredded coconut (optional for coating) Can also be mixed directly into the mixture.

Method
 

Preparation
  1. In a food processor, combine the pitted dates, dried cherries, nuts, cocoa powder, salt, and vanilla extract.
  2. Pulse until the mixture is well combined and sticky.
  3. If the mixture is too dry, add a little water or more dates.
  4. Roll the mixture into small balls (about 1 inch in diameter).
  5. If desired, roll the balls in shredded coconut to coat.
  6. Place the balls on a plate and refrigerate for at least 30 minutes before serving.

Notes

To keep your Chocolate Cherry Date Balls fresh, store them in an airtight container in the refrigerator. They can last for up to two weeks. If you want to keep them longer, you can freeze them in a freezer-safe container.
