Chocolate Chip Cookie Dough Protein Bars

Ingredients
  

Dry Ingredients
  • 1 3/4 cup whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1/4 teaspoon vanilla baking salt plus extra for garnish
  • 1/4 teaspoon baking soda
Wet Ingredients
  • 1/3 cup agave
  • 1/2 cup natural peanut butter
  • 1/4 cup milk can substitute with almond or oat milk
  • 1 teaspoon vanilla extract
Topping
  • 3/4 cup chocolate chips for melting
  • 3 tablespoons natural peanut butter
  • 1 tablespoon coconut oil

Method
 

Preparation
  1. Line an 8x8 pan with parchment paper.
  2. In a large mixing bowl, combine whole wheat flour, vanilla protein powder, baking soda, and vanilla salt. Stir to mix.
  3. Add agave, peanut butter, milk, and vanilla extract. Stir until everything is well combined.
  4. Transfer the mixture to the lined pan and press it down firmly into an even layer.
Chocolate Coating
  1. Melt the chocolate chips, peanut butter, and coconut oil in a medium microwave-safe bowl. Microwave for 20 seconds at a time, mixing in between until melted.
  2. Pour the melted chocolate over the bars and spread it evenly with a spatula.
Setting
  1. Place the pan in the refrigerator for a few hours to set.
  2. Once set, slice into 9 bars and sprinkle extra vanilla salt on top.

Notes

Keep protein bars in an airtight container in the refrigerator for up to a week, or freeze individually wrapped. Use natural peanut butter for better texture, and consider using dark chocolate chips for a richer flavor.
