Preparation
  1. Cut the bananas in half and stick a popsicle stick into each half.
  2. Place the bananas in the freezer for about 20 minutes.
  3. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil, and microwave on 60% heat until melted, checking every 30 seconds to avoid burning.
Assembly
  1. Once the bananas are frozen, dip each banana half into the melted chocolate.
  2. Quickly add any toppings you like, as the chocolate will freeze fast.
  3. Place the chocolate-covered bananas back in the freezer until well frozen.

Notes

These treats are best served straight from the freezer and can be cut into smaller pieces for easy eating. Store in an airtight container for up to two weeks. Individually wrap for easy snacking.
