Method
 

Preparation
  1. Slice the apple into ¼-inch thick rings and remove the core.
  2. Pat the apple rings dry with a paper towel.
  3. Spread peanut butter evenly over each apple ring.
Chocolate Coating
  1. Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
  2. Dip each peanut butter-covered apple ring halfway into the melted chocolate.
  3. Place the dipped rings on a parchment-lined baking sheet.
  4. Refrigerate for 10-15 minutes until the chocolate sets.
