Ingredients
  

Main Ingredients
  • 1 cup pecans, chopped Ensure pecans are finely chopped for better mixing.
  • 1 cup sugar
  • 1 cup unsweetened shredded coconut
  • 1/2 cup all-purpose flour Can substitute with a gluten-free flour blend.
  • 1/2 cup unsalted butter, melted Ensure butter is fully melted.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 oz semi-sweet chocolate, chopped May substitute with dark or milk chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the pecans, sugar, shredded coconut, flour, melted butter, vanilla extract, and salt until well combined.
  3. Drop small spoonfuls of the mixture onto the prepared baking sheet, leaving enough space between each cookie as they will spread out while baking.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown.
  2. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Dipping
  1. While the cookies cool, melt the chocolate in a microwave or double boiler until smooth.
  2. Dip the cooled cookies halfway into the melted chocolate and shake off any excess. Place them back on the wire rack.
  3. Allow the chocolate to set before enjoying your delicious cookies.

Notes

Store the cookies in an airtight container at room temperature for up to a week. You can freeze them for longer storage, just ensure the chocolate is set and layer with parchment paper to prevent sticking.
