Ingredients

  • 1 cup peanut butter Use creamy peanut butter for a smoother texture.
  • 1/2 cup honey or maple syrup Add more for a sweeter taste if desired.
  • 2 pieces eggs Can be substituted with flaxseed eggs for vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the peanut butter, honey (or maple syrup), eggs, and vanilla extract. Mix until smooth.
  3. Add the cocoa powder, baking powder, and salt. Stir until well combined.
  4. Pour the batter into the prepared muffin tin, filling each cup about halfway.
Baking
  1. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

These muffins can be served warm with a smear of extra peanut butter on top or with a drizzle of honey. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Allow to thaw at room temperature or microwave for a few seconds to enjoy.
