Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, combine the peanut butter, honey (or maple syrup), eggs, and vanilla extract. Mix until smooth.
- Add the cocoa powder, baking powder, and salt. Stir until well combined.
- Pour the batter into the prepared muffin tin, filling each cup about halfway.
Baking
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
These muffins can be served warm with a smear of extra peanut butter on top or with a drizzle of honey. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Allow to thaw at room temperature or microwave for a few seconds to enjoy.
