Ingredients

For the Salad:
  • 2 cups cooked chicken shredded or diced (boiled, grilled, or rotisserie)
  • ½ cup mayonnaise or Greek yogurt for a lighter option
  • 1 teaspoon Dijon mustard for a slight tang
  • ½ cup celery finely chopped
  • ¼ cup red onion finely diced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt & black pepper to taste
  • 1 tablespoon fresh dill or parsley chopped (optional)
Optional Add-Ins:
  • ¼ cup sliced almonds for crunch
  • ¼ cup red or green grapes halved (for sweetness)
  • ¼ cup shredded cheddar cheese for extra flavor
  • 1 tablespoon lemon juice for freshness

Method

  1. 1️⃣ Prepare the Chicken – If using fresh chicken, cook and shred or dice it. Rotisserie chicken works great for added flavor.
  2. 2️⃣ Mix the Dressing – In a bowl, whisk together mayonnaise (or Greek yogurt), Dijon mustard, garlic powder, onion powder, salt, and black pepper. Add lemon juice if using.
  3. 3️⃣ Combine Ingredients – In a large mixing bowl, combine the shredded chicken, celery, red onion, and fresh herbs. Pour the dressing over and mix well.
  4. 4️⃣ Add Extras – Fold in any additional ingredients like almonds, grapes, or cheese, if desired.
  5. 5️⃣ Chill & Serve – Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  6. 6️⃣ Enjoy – Serve on toasted bread, croissants, lettuce wraps, or with crackers.

Notes

For a lighter version, use Greek yogurt instead of mayonnaise.
Want more crunch? Add diced apples, pecans, or sunflower seeds.
Prefer a spicy kick? Add a dash of hot sauce or smoked paprika.
Storage Tip: Keep in an airtight container in the fridge for up to 4 days.
