Preparation
- Preheat your oven to 325°F (160°C) and line a loaf pan with parchment paper or grease it with nonstick cooking spray.
- In a medium-sized mixing bowl, combine the flour, salt, and baking powder until well mixed. Set it aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together using a hand mixer until creamy and well blended.
- Add the eggs, coconut extract, vanilla extract, and coconut milk to the butter mixture, beating until the batter is smooth.
- Gradually mix in the dry ingredients until just combined—be careful not to overmix!
- Fold in the sweetened shredded coconut until it is evenly distributed.
Baking
- Pour the coconut batter into the prepared loaf pan and bake for 60-70 minutes until a toothpick inserted into the center comes out clean.
Glazing
- In a separate bowl, mix together the powdered sugar, coconut milk, coconut extract, and vanilla extract for the glaze until smooth.
- Once the bread has cooled, drizzle the glaze over it and sprinkle with additional shredded coconut, if desired.
Notes
Serve with fresh fruit or a dollop of whipped cream. It pairs well with coffee or tea. To store, wrap tightly in plastic wrap or aluminum foil at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to 3 months.
