Ingredients
  

For the Bread
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 0.5 tsp coconut extract
  • 0.5 tsp vanilla extract
  • 0.5 cup canned coconut milk
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 1 tsp salt
  • 1 cup sweetened shredded coconut
For the Glaze
  • 1 cup powdered sugar
  • 0.5 cup canned coconut milk For glaze.
  • 0.25 tsp coconut extract For glaze.
  • 0.75 tsp vanilla extract For glaze.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a loaf pan with parchment paper or grease it with nonstick cooking spray.
  2. In a medium-sized mixing bowl, combine the flour, salt, and baking powder until well mixed. Set it aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together using a hand mixer until creamy and well blended.
  4. Add the eggs, coconut extract, vanilla extract, and coconut milk to the butter mixture, beating until the batter is smooth.
  5. Gradually mix in the dry ingredients until just combined—be careful not to overmix!
  6. Fold in the sweetened shredded coconut until it is evenly distributed.
Baking
  1. Pour the coconut batter into the prepared loaf pan and bake for 60-70 minutes until a toothpick inserted into the center comes out clean.
Glazing
  1. In a separate bowl, mix together the powdered sugar, coconut milk, coconut extract, and vanilla extract for the glaze until smooth.
  2. Once the bread has cooled, drizzle the glaze over it and sprinkle with additional shredded coconut, if desired.

Notes

Serve with fresh fruit or a dollop of whipped cream. It pairs well with coffee or tea. To store, wrap tightly in plastic wrap or aluminum foil at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to 3 months.
