  • 2 pieces chicken breasts Breast meat is ideal for this recipe.
  • 1 cup shredded coconut
  • 1 cup breadcrumbs Regular or seasoned breadcrumbs can be used.
  • 1/2 cup flour
  • 2 pieces eggs Beaten for dipping.
  • to taste Salt and pepper For seasoning.
  • for frying oil Oil Any neutral oil suitable for frying.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) if you plan to bake the chicken.
  2. Season the chicken breasts with salt and pepper.
  3. Set up a breading station with three bowls: place flour in one, beaten eggs in another, and mix shredded coconut and breadcrumbs in the third bowl.
  4. Dredge each chicken breast in flour, dip it in the eggs, and then coat with the coconut-bread mixture.
Cooking
  1. For frying, heat oil in a skillet over medium heat and cook each chicken breast for about 5-7 minutes on each side until they’re golden brown and cooked through.
  2. If baking, place the coated chicken on a baking sheet and bake for 20-25 minutes until golden and cooked through.
Serving
  1. Serve hot with a fresh salad, rice, or side of veggies, and a sweet & tangy dipping sauce like mango salsa or sweet chili sauce.

Notes

For extra flavor, add spices to the breadcrumbs like garlic powder or paprika. For a lighter version, try baking the chicken instead of frying. Make sure the oil is hot enough before frying for the best crunch.
