Preparation
- Preheat the oven to 400°F (200°C) if you plan to bake the chicken.
- Season the chicken breasts with salt and pepper.
- Set up a breading station with three bowls: place flour in one, beaten eggs in another, and mix shredded coconut and breadcrumbs in the third bowl.
- Dredge each chicken breast in flour, dip it in the eggs, and then coat with the coconut-bread mixture.
Cooking
- For frying, heat oil in a skillet over medium heat and cook each chicken breast for about 5-7 minutes on each side until they’re golden brown and cooked through.
- If baking, place the coated chicken on a baking sheet and bake for 20-25 minutes until golden and cooked through.
Serving
- Serve hot with a fresh salad, rice, or side of veggies, and a sweet & tangy dipping sauce like mango salsa or sweet chili sauce.
Notes
For extra flavor, add spices to the breadcrumbs like garlic powder or paprika. For a lighter version, try baking the chicken instead of frying. Make sure the oil is hot enough before frying for the best crunch.
