Preparation
- In a food processor, add the pitted dates and blend until they become a sticky paste.
- Add the rolled oats, shredded coconut, matcha powder, almond or peanut butter, salt, and vanilla extract to the food processor.
- Blend everything together until the mixture is well combined and starts to form a dough.
- Using your hands, roll the mixture into small bite-sized balls.
- (Optional) Roll the balls in extra shredded coconut for a nice coating.
- Place the energy balls on a plate or baking sheet and refrigerate for about 15-30 minutes to firm up.
Notes
To keep them fresh, store the Coconut Matcha Energy Balls in an airtight container in the refrigerator for about one week, or freeze them for up to three months. For a sweeter taste, add a tablespoon of honey or maple syrup. If you prefer a creamier texture, blend the ingredients longer until smooth. You can also replace matcha with cocoa powder for a chocolate version.
