Preparation
- Wash, dry, and halve the apricots lengthwise. Twist the halves to separate, then remove and discard the pits.
- Arrange the apricot halves on a large plate, cut-side facing up.
- Top each apricot half with 1 tablespoon of cottage cheese.
- Roughly chop the almonds and sprinkle them over the apricots, along with the sesame seeds.
Serving
- Divide the apricots between plates. Drizzle with honey and sprinkle with cinnamon. Enjoy!
Notes
These bites are best enjoyed fresh. If you have leftovers, store them in an airtight container in the refrigerator for up to a day. The flavors will still be tasty even if the apricots lose some firmness.
