  • 1 cup full-fat cottage cheese For best moisture and flavor.
  • 1 cup self-rising flour You can substitute with 1 cup all-purpose flour + 1.5 tsp baking powder + 1/4 tsp salt.
  • 1 large egg Beaten, for egg wash.
  • 1 tablespoon Everything bagel seasoning or sesame seeds For sprinkling.

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the full-fat cottage cheese and self-rising flour until just combined. If using all-purpose flour, add the baking powder and salt to the mixture.
  3. Gently knead the dough on a lightly floured surface until it forms a smooth ball.
  4. Divide the dough into equal pieces and shape each piece into a bagel, making a hole in the center.
  5. Place the bagels on the prepared baking sheet. Brush each with the beaten egg and sprinkle with Everything bagel seasoning or sesame seeds.
  6. Bake in the preheated oven for about 20-25 minutes or until the bagels are golden brown.
  7. Let them cool slightly, then slice and enjoy!

Notes

These bagels are versatile and can be topped with cream cheese, smoked salmon, fresh vegetables, or avocado. Store cooled bagels in an airtight container at room temperature for up to two days, or freeze with parchment paper in between to prevent sticking.
