Ingredients
  

For the salad
  • 4 oz cooked, seasoned chicken ~3/4 cup
  • 2 cups romaine lettuce, chopped (94 g)
  • 1/2 oz parmesan cheese, fresh grated (14 g) ~3 tbsp
  • 1/4 cup cottage cheese Caesar dressing (56 g)
  • 1/2 cup homemade croutons (15 g)
Cottage Cheese Caesar Dressing
  • 1 cup 2% low fat cottage cheese (226 g)
  • 1 oz parmesan cheese, fresh grated (28 g) ~1/3 cup
  • 1 large clove garlic or 2 smaller ones
  • 1 tbsp lemon juice (15 g)
  • 1/2 tbsp Worcestershire sauce
  • 1/2 tbsp dijon mustard
  • 1/4 cup milk plus more to thin
  • 1/4 tsp salt
  • 1/4 tsp pepper
Croutons
  • 3 slices white bread (70 g)
  • 2 g light spray avocado oil or olive oil
  • to taste Italian seasoning, garlic powder, salt, and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Cut or tear the bread into chunks, spray with oil, season with Italian seasoning, garlic powder, salt, and pepper, and bake for 6–8 minutes until golden.
Dressing Preparation
  1. In a blender, combine the cottage cheese, parmesan, garlic, lemon juice, Worcestershire sauce, Dijon mustard, milk, salt, and pepper.
  2. Blend until smooth. Add more milk if you want a thinner consistency.
  3. Taste and adjust seasoning if needed.
Assembly
  1. To assemble the salad, combine the lettuce, chicken, dressing, parmesan, and croutons.
  2. Toss to mix and serve.

Notes

Blend longer for a super smooth dressing. Adjust the garlic according to your taste; you can also roast it for a milder flavor. Add herbs like parsley or basil for a differing flavor profile. Store any leftover dressing in an airtight container in the refrigerator for about 3-4 days. Stir in a bit of milk to restore consistency if thickened.
