Preparation
  1. In a microwave-safe bowl, melt the dark chocolate chips until smooth. Let it cool slightly.
  2. In a blender, combine the cottage cheese, melted chocolate, sweetener, vanilla extract, and salt. Blend until smooth and creamy.
  3. If using heavy cream, whip it until soft peaks form, then gently fold it into the chocolate mixture for added richness.
  4. Spoon the mousse into serving dishes and chill in the refrigerator for at least 1 hour before serving.

Notes

Store the mousse covered in the refrigerator for about 3-4 days. Stir before serving as it may thicken slightly.
