  • 1/4 cup finely diced red onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Whole grain or sourdough bread

Method
 

Preparation
  1. In a medium bowl, combine the cottage cheese, chopped hard-boiled eggs, celery, and red onion.
  2. In a small bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  3. Fold the dressing into the egg mixture until well combined.
  4. Serve on whole grain or sourdough bread as a sandwich.

Notes

Serve fresh with crunchy vegetables or fruit. Add fresh herbs or a dash of paprika on top for extra flavor. To store, keep leftovers in an airtight container in the refrigerator for up to 3 days.
