  • 1 cup cottage cheese Use low-fat or regular cottage cheese as preferred.
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for a vegan version.
  • 1/4 cup milk Use any kind of milk, including plant-based alternatives.
  • 2 cloves garlic, minced Add more garlic for a stronger flavor.
  • 1 teaspoon dried basil Fresh basil can be used for a brighter flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil For sautéing.
  • 1/4 teaspoon red pepper flakes Optional for spice.

Method
 

Preparation
  1. In a blender, combine the cottage cheese, Parmesan cheese, milk, garlic, basil, salt, and pepper.
  2. Blend the mixture until smooth and creamy.
Cooking
  1. In a saucepan, heat the olive oil over medium heat.
  2. Add the blended cottage cheese mixture to the saucepan and stir well.
  3. Cook for 5-7 minutes, stirring occasionally, until heated through.
  4. If desired, add red pepper flakes for a spicy kick.
Serving
  1. Serve the sauce over your favorite pasta and enjoy!

Notes

Store leftover sauce in an airtight container in the refrigerator for up to three days or freeze for up to three months. Thaw in the fridge overnight before reheating.
