Main ingredients
  • 1 cup cottage cheese Best if well-drained.
  • 1/2 cup almond flour Can substitute with regular flour.
  • 1/2 cup rolled oats Use certified gluten-free oats for gluten-free cookies.
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup peanut butter or almond butter Can substitute with other nut butters.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon Other spices can be added for flavor.
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips or nuts (optional) Add for extra flavor and texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, almond flour, rolled oats, honey or maple syrup, peanut butter or almond butter, vanilla extract, baking soda, cinnamon, and salt. Mix until well combined.
  3. If desired, fold in the chocolate chips or nuts.
  4. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 20 minutes or until the edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. They can also be frozen for up to three months. Thaw at room temperature or microwave for a warm treat.
