Ingredients
  

Pasta and Dairy
  • 8 oz rigatoni pasta Use your preferred pasta shape
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese Sprinkle extra for serving
Vegetables and Seasoning
  • 1 cup spinach (fresh or frozen) If using frozen, thaw and drain excess water
  • 2 cloves garlic (minced) Add more if desired
  • 1 tbsp olive oil For sautéing
  • Salt to taste
  • Pepper to taste
  • 1/2 tsp Italian seasoning

Method
 

Cooking the Pasta
  1. Cook the rigatoni according to package instructions until al dente. Drain and set aside.
Preparing the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add the spinach and cook until wilted.
Combining Ingredients
  1. In a large bowl, combine the cooked pasta, cottage cheese, Parmesan cheese, Italian seasoning, salt, and pepper.
  2. Pour the spinach and garlic mixture into the bowl and mix until well combined.
  3. Serve immediately and enjoy!

Notes

Best served warm, optionally topped with more Parmesan cheese. Pairs well with a side salad or garlic bread. Add fresh herbs for garnish.
