  • 1 cup Pineapple, diced Fresh or canned (drained well)
  • 1 box Lime or orange Jell-O Flavor can be varied
  • 1 cup Mini marshmallows
  • 1 cup Cool whip Or any other whipped topping
  • 1/2 cup Chopped walnuts For texture and flavor

Method
 

Preparation
  1. In a large bowl, combine cottage cheese and pineapple.
  2. Add the Jell-O and stir until well mixed.
  3. Fold in mini marshmallows and cool whip gently.
  4. Add chopped walnuts and mix until combined.
  5. Refrigerate for at least 30 minutes before serving for a cool, refreshing treat.

Notes

Serve in small bowls or on a large platter. Pairs well with grilled meats or sandwiches. Garnish with an extra sprinkle of walnuts or pineapple pieces.
