  • 1-2 jalapenos Add more for heat.
  • 1 bunch cilantro Fresh herb flavor.
Legumes and Corn
  • 15 oz black beans Rinse and drain thoroughly.
  • 15 oz black-eyed peas Creaminess and flavor.
  • 10 oz frozen corn kernels Thaw by soaking in water before draining.
Dressing Ingredients
  • 1/3 cup olive oil Base for your zesty dressing.
  • 1 tbsp white wine vinegar Adds essential acidity.
  • 1 tbsp granulated sugar Balances the acidity.
  • Juice of 1 lime Brightens the Cowboy Caviar.
  • 1/2 tsp chili powder Offers warmth and depth.
  • 1/4 tsp garlic powder Enhances the flavor.
  • 1/4 tsp cayenne pepper Optional for added heat.
  • Salt and pepper Adjust to taste.

Method
 

Preparation
  1. Dice the Roma tomatoes, red onion, green bell pepper, and jalapenos. Chop the cilantro finely.
Mixing
  1. In a large bowl, combine the black beans, black-eyed peas, thawed corn, diced tomatoes, onion, bell pepper, jalapenos, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, white wine vinegar, sugar, lime juice, chili powder, garlic powder, cayenne pepper, and a pinch of salt and pepper. Taste to adjust seasonings if needed.
  3. Pour the dressing over the vegetable mixture. Stir gently until everything is well mixed.
Resting Time
  1. Let the Cowboy Caviar sit for at least 30 minutes to allow the flavors to blend.

Notes

Use ripe tomatoes for the best flavor. Adjust the amount of jalapenos based on your heat preference. Letting it sit in the fridge enhances the flavor, so make it a few hours before serving.
