Ingredients
  

  • 1 cup fresh lump crab meat picked over for shells
  • 1 cup heavy cream
  • 3 large egg yolks
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp shallots finely minced
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp granulated sugar for caramelized topping

Method
 

  1. Preheat the Oven: Set your oven to 325°F (160°C). Place 4 ramekins in a high-sided baking tray.
Prepare the Custard Base:
  1. In a mixing bowl, whisk together the egg yolks and heavy cream until smooth.
  2. Stir in the Parmesan cheese, Dijon mustard, minced shallots, salt, and pepper.
  3. Incorporate the Crab: Gently fold the fresh crab meat into the custard mixture, being careful not to break up the chunks.
  4. Set Up the Water Bath: Divide the custard mixture evenly among the ramekins. Pour hot water into the baking tray until it reaches halfway up the sides of the ramekins.
  5. Bake the Custard: Bake for 25–30 minutes, or until the custards are set but still jiggle slightly in the center.
  6. Cool and Chill: Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.
Caramelize the Sugar Topping:
  1. Sprinkle 1/2 teaspoon of sugar evenly over each custard.
  2. Use a kitchen torch to caramelize the sugar until golden and crisp. Alternatively, broil for 1–2 minutes, watching closely.
  3. Serve: Garnish with fresh parsley or lemon zest, and serve immediately with toasted baguette slices or crackers.
