Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1/2 cup almond flour Can substitute with whole wheat or oat flour.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh squeezed orange juice
  • 1/3 cup honey Can be replaced with maple syrup for vegan option.
  • 1 large egg Can be replaced with a flax egg for vegan option.
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil
Add-ins
  • 3/4 cup dried cranberries
  • zest from 1 medium orange zest
  • 1/2 cup chopped walnuts Optional, can substitute with almonds or pecans.

Method
 

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit. Lightly grease or line an 8 inch by 8 inch square baking pan with parchment paper.
  2. In a large bowl, combine rolled oats, almond flour, baking powder, and salt.
  3. In a separate bowl, whisk together Greek yogurt, orange juice, honey, egg, vanilla extract, and melted coconut oil until the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients and mix well.
  5. Add dried cranberries, orange zest, and chopped walnuts (if using).
  6. Pour the mixture into the prepared baking pan and spread evenly.
Baking
  1. Bake for approximately 25-30 minutes or until golden brown.
  2. Let cool in the pan before cutting into bars.

Notes

These bars can be enjoyed on their own or paired with fruit or Greek yogurt. Store in an airtight container for up to a week, or freeze for 2-3 months.
