Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp Cajun seasoning, optional
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1/2 tsp red pepper flakes, optional
  • 2 cup cooked white rice
  • Fresh parsley, chopped, for garnish

Method
 

  1. Season the shrimp with paprika, Cajun seasoning if using, salt, black pepper, and Italian seasoning.
  2. Heat the butter and olive oil in a large skillet over medium-high heat. Cook the shrimp for 1 to 2 minutes per side, until pink and tender. Remove and set aside.
  3. In the same skillet, add the garlic and cook for 30 seconds, until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce thickens slightly.
  5. Return the shrimp to the skillet and toss to coat in the creamy garlic butter sauce. Simmer for 1 to 2 minutes.
  6. Spoon the cooked white rice into bowls, top with the creamy garlic shrimp, drizzle with extra sauce, and garnish with chopped parsley and freshly cracked black pepper.

Notes

Do not overcook the shrimp during the first sear because they will finish cooking briefly in the sauce.
Use freshly grated Parmesan for the smoothest sauce because it melts more evenly than pre-shredded cheese.
Prepare the rice ahead of time so it is warm and ready when the shrimp and sauce are finished.
Adjust the spice level by including or omitting the Cajun seasoning and red pepper flakes.
Brown rice may be substituted for white rice, but it requires a longer cooking time when prepared from scratch.
Half-and-half may replace the heavy cream, although the sauce will be thinner and less rich.
Frozen shrimp may be used after thawing completely and patting dry before cooking.
