Creamy Garlic Herb Shrimp & Rice Bowls

Ingredients
  

  • 12 oz large raw shrimp, peeled, deveined, and patted dry
  • 1 tbsp olive oil
  • 1/2 tsp Italian seasoning
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • Salt, only as needed
  • 1 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1/2 tsp Italian seasoning
  • Red pepper flakes, optional
  • 1 tbsp fresh parsley, chopped
  • 2 cup hot cooked jasmine or basmati rice

Method
 

  1. Toss the dry shrimp with Italian seasoning, paprika, black pepper, and a little salt.
  2. Heat the olive oil over medium-high heat. Cook the shrimp for 60 to 90 seconds, turn, and cook for about 30 seconds more. Transfer to a plate while slightly underdone.
  3. Lower the heat to medium. Melt the butter and cook the garlic for 30 seconds, until fragrant.
  4. Add the chicken broth, heavy cream, Italian seasoning, and red pepper flakes, if using. Simmer gently for 2 to 3 minutes without boiling hard.
  5. Return the shrimp to the skillet for 30 to 60 seconds, until pearly, opaque, and fully cooked. Stir in the parsley.
  6. Divide the hot rice between two bowls and spoon the creamy garlic herb shrimp with plenty of sauce over or alongside the rice.

Notes

Pat the shrimp dry before seasoning so they sear properly instead of steaming.
Cook the shrimp only until slightly underdone during the first sear because they will finish cooking in the sauce.
Simmer the cream sauce gently and avoid a hard boil to help keep it smooth.
Add salt only as needed because the broth may already provide enough seasoning.
The red pepper flakes are optional and may be omitted for a milder dish.
Serve immediately over hot jasmine or basmati rice with plenty of sauce.
