- Cook the tortellini according to the package directions until tender. Drain and set aside without rinsing.
- Pat the shrimp completely dry and season with paprika, garlic powder, salt, and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Sear the shrimp for 1 to 2 minutes per side, until pink and lightly golden. Remove and set aside.
- In the same skillet, melt the butter. Add the garlic and cook for 30 seconds, until fragrant.
- Add the spinach and cook until wilted, about 1 minute. Pour in the chicken broth and heavy cream, then bring to a gentle simmer.
- Stir in the Parmesan cheese and Italian seasoning until the sauce is smooth and creamy.
- Add the cooked tortellini and shrimp back to the skillet. Toss gently until everything is coated in the creamy garlic sauce.
- Sprinkle with fresh parsley and extra black pepper if desired. Serve hot.
Notes
Pat the shrimp very dry before searing so they brown instead of steaming.
Remove the shrimp from the heat while slightly underdone because they will finish cooking in the sauce.
Grate the Parmesan fresh for the smoothest sauce.
Loosen leftover sauce with a splash of warm broth or cream when reheating.
