- In a large skillet, heat olive oil over medium heat.
- Add the Italian sausage and cook until browned.
- Stir in minced garlic and cook for another minute.
- Add heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked tortellini and spinach, and toss to combine.
- Season with salt and black pepper to taste.
- Serve immediately.
Notes
Serve in bowls with extra Parmesan on top and fresh herbs for color. A side salad and crusty bread complement the dish nicely. Let leftovers cool before refrigerating for up to three days.
