Ingredients
  

  • 1 lb sirloin steak, cut into bite-size pieces
  • 1 lb large shrimp, peeled and deveined
  • 1 lb boneless chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tsp fajita seasoning
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt and black pepper, to taste
  • 2 cloves garlic, minced
  • 3/4 cup heavy cream
  • 1 cup Monterey Jack or mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped
  • Warm flour tortillas, for serving

Method
 

  1. Season the steak and chicken with fajita seasoning, smoked paprika, garlic powder, chili powder, salt, and black pepper. Heat the olive oil in a large skillet and cook the steak and chicken until nicely browned and fully cooked. Remove and set aside.
  2. Melt the butter in the same skillet. Add the shrimp and sauté just until pink, opaque, and lightly caramelized. Remove the shrimp and keep warm.
  3. Add the red bell pepper, green bell pepper, and onion to the hot skillet. Cook until tender-crisp with lightly browned edges.
  4. Reduce the heat and add the minced garlic. Cook briefly until fragrant, then pour in the heavy cream. Stir in the Monterey Jack or mozzarella and Parmesan until melted and creamy.
  5. Return the steak, chicken, shrimp, peppers, and onions to the skillet. Toss gently until everything is coated in the creamy cheese sauce and heated through.
  6. Transfer the creamy steak, chicken, and shrimp fajita mixture to a large serving platter. Sprinkle with fresh parsley and serve hot with warm flour tortillas.

Notes

Season the steak and chicken evenly before cooking so every bite is flavorful.
Cook the steak and chicken until browned and fully cooked, then remove them before adding the shrimp.
Sauté the shrimp only until pink and opaque to keep them tender.
Cook the peppers and onions until tender-crisp so they keep some texture.
Reduce the heat before adding the garlic and cream to prevent scorching.
Stir the cheeses in gradually until the sauce is smooth and creamy.
Return all of the cooked meat, shrimp, and vegetables to the skillet only long enough to heat through and coat in the sauce.
