- Season the steak and chicken with fajita seasoning, smoked paprika, garlic powder, chili powder, salt, and black pepper. Heat the olive oil in a large skillet and cook the steak and chicken until nicely browned and fully cooked. Remove and set aside.
- Melt the butter in the same skillet. Add the shrimp and sauté just until pink, opaque, and lightly caramelized. Remove the shrimp and keep warm.
- Add the red bell pepper, green bell pepper, and onion to the hot skillet. Cook until tender-crisp with lightly browned edges.
- Reduce the heat and add the minced garlic. Cook briefly until fragrant, then pour in the heavy cream. Stir in the Monterey Jack or mozzarella and Parmesan until melted and creamy.
- Return the steak, chicken, shrimp, peppers, and onions to the skillet. Toss gently until everything is coated in the creamy cheese sauce and heated through.
- Transfer the creamy steak, chicken, and shrimp fajita mixture to a large serving platter. Sprinkle with fresh parsley and serve hot with warm flour tortillas.
