Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, mix together the flour, baking powder, and salt. Gradually blend this mixture into the wet ingredients.
- Stir in the vanilla pudding mix until well combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes.
- Once cooled, sprinkle a thin layer of sugar on top of each cookie.
- Use a kitchen torch to caramelize the sugar until it's golden brown and crispy.
- Let cool completely before serving.
Notes
To keep your Crème Brûlée Cookies fresh, store them in an airtight container at room temperature for about a week. You can freeze the cookies before caramelizing the sugar for longer storage.
