  • 1 cup unsalted butter, softened Make sure your butter is softened to room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup vanilla pudding mix You can substitute the pudding mix with cornstarch and vanilla extract if not available.
  • Sugar for caramelizing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, mix together the flour, baking powder, and salt. Gradually blend this mixture into the wet ingredients.
  5. Stir in the vanilla pudding mix until well combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let them cool on the baking sheet for a few minutes.
  9. Once cooled, sprinkle a thin layer of sugar on top of each cookie.
  10. Use a kitchen torch to caramelize the sugar until it's golden brown and crispy.
  11. Let cool completely before serving.

Notes

To keep your Crème Brûlée Cookies fresh, store them in an airtight container at room temperature for about a week. You can freeze the cookies before caramelizing the sugar for longer storage.
