Preparation
- Preheat the oven to 350°F (or follow the temperature on your crescent roll package).
- Lightly grease a large cookie sheet or line it with parchment paper.
- Wash and dice the broccoli, carrots, bell peppers, and cucumber into small, bite-sized pieces.
- Unroll the 2 tubes of crescent rolls and spread the dough across the cookie sheet, covering the entire sheet evenly. Pinch the perforations together to seal.
- Bake according to the crescent roll package instructions (around 10–13 minutes) until golden brown and set.
- Allow the crust to cool completely.
Assembly
- In a medium-sized bowl, combine the softened cream cheese, sour cream, dry ranch dressing mix, and dill. Stir until smooth.
- Spread the cream-cheese mixture evenly over the cooled crust.
- Evenly distribute the chopped vegetables over the cream-cheese layer.
- Chill for at least 30 minutes before slicing.
- Remove from the fridge about 10–15 minutes before serving if assembled the night before.
Serving
- Slice the veggie pizza into squares or triangles for easy serving.
- You can arrange them on a platter and garnish with extra dill or a sprinkle of parsley for a pop of color.
- Serve with additional ranch dressing on the side for those who want an extra dip.
Notes
Feel free to mix and match vegetables based on your preferences. Other great options include cherry tomatoes, spinach, or even olives. For a little added crunch, you can sprinkle some shredded cheese over the top along with the veggies. Make sure to let the crust cool completely before adding the cream cheese mixture to prevent it from melting.
