Preparation
- Pat the cod fillets very dry with paper towels. Season both sides lightly with salt and black pepper.
- Place the flour in one shallow bowl. Beat the egg in a second bowl. In a third bowl, mix panko, plain breadcrumbs, paprika, garlic powder, onion powder, lemon zest, salt, and black pepper.
- Dip each cod fillet into the flour, then into the egg, and finally into the breadcrumb mixture, pressing gently to ensure the coating sticks.
Cooking
- Preheat the air fryer to 400°F and lightly spray the basket with olive oil spray.
- Arrange the coated cod fillets in a single layer without overlapping. Lightly spray the tops with olive oil spray.
- Air fry for 8 to 10 minutes, flipping gently halfway through, until the coating is golden and the fish flakes easily with a fork.
Serving
- Serve hot with lemon wedges and fresh parsley.
Notes
Store any leftovers in an airtight container in the refrigerator and consume within 1-2 days. Reheat in the air fryer for a few minutes until heated and crispy again.
