Ingredients
  

Base Ingredients
  • 1 block firm tofu Press well to remove moisture
  • 2 cups cooked brown rice You can use pre-cooked rice to save time
  • 1 can black beans Rinsed and drained
  • 1 cup corn Frozen or canned
  • 1 piece bell pepper Diced
  • 1 piece avocado Diced, add fresh when serving
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
Garnishes
  • Fresh cilantro For garnish
  • Lime wedges For serving

Method
 

Preparation
  1. Press the tofu to remove excess moisture, then crumble it into a bowl.
Cooking
  1. In a skillet, heat a little oil over medium heat and add the crumbled tofu.
  2. Sprinkle with cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.
Assembly
  1. In meal prep containers, layer cooked brown rice, black beans, corn, crumbled tofu, and diced bell pepper.
  2. Top each bowl with diced avocado and fresh cilantro.
Serving
  1. Serve with lime wedges for extra flavor.

Notes

Crumble tofu burrito bowls can be stored in airtight containers in the refrigerator for up to 5 days. Reheat in the microwave or enjoy cold. Customize with additional vegetables or toppings as desired.
