Dressing Ingredients
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce Use gluten-free soy sauce for gluten-free option
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup Adjust to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded green and purple cabbage, grated carrots, and chopped herbs.
  2. In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and season with salt and pepper to taste.
  3. Pour the dressing over the salad mixture and toss well to combine.
  4. Add chopped roasted peanuts on top for crunch.
  5. Serve immediately or store in the refrigerator for meal prep.

Notes

To save time, use pre-shredded cabbage and pre-grated carrots. Adjust the dressing to your taste. Fresh herbs can change the flavor; try different herbs based on your preference.
