Preparation
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Spread uncooked rice evenly in the bottom of the dish. Pour the chicken broth over the rice to fully submerge it.
- Layer the chicken pieces over the rice. Sprinkle with garlic powder, onion powder, oregano, and paprika.
- Spoon the tzatziki sauce over the chicken and gently spread it to coat.
Baking
- Cover the dish tightly with foil and bake for 35–40 minutes, until the chicken is cooked through and the rice is tender.
- If you notice excess liquid remaining, uncover the dish and bake for an additional 5–10 minutes.
Serving
- Let the casserole rest for 5 minutes. Top with feta, parsley or dill, and cucumber slices before serving.
Notes
Use fresh herbs when possible to enhance the flavor. Consider adding vegetables like spinach or bell peppers. For a spicier version, add red pepper flakes to the chicken seasoning.
