Ingredients
  

For the casserole base
  • 1 cup long-grain white rice Uncooked
  • 1.5 cups low-sodium chicken broth To fully submerge the rice
For the chicken and seasoning
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp paprika
For the topping
  • 1 cup tzatziki sauce Store-bought or homemade
  • 0.5 cups crumbled feta cheese For garnish
  • 0.5 cups chopped fresh parsley or dill For garnish
  • 1 medium cucumber, thinly sliced Optional, for garnish

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly in the bottom of the dish. Pour the chicken broth over the rice to fully submerge it.
  3. Layer the chicken pieces over the rice. Sprinkle with garlic powder, onion powder, oregano, and paprika.
  4. Spoon the tzatziki sauce over the chicken and gently spread it to coat.
Baking
  1. Cover the dish tightly with foil and bake for 35–40 minutes, until the chicken is cooked through and the rice is tender.
  2. If you notice excess liquid remaining, uncover the dish and bake for an additional 5–10 minutes.
Serving
  1. Let the casserole rest for 5 minutes. Top with feta, parsley or dill, and cucumber slices before serving.

Notes

Use fresh herbs when possible to enhance the flavor. Consider adding vegetables like spinach or bell peppers. For a spicier version, add red pepper flakes to the chicken seasoning.
