  • 1 piece bell pepper, sliced Any color
  • 1 piece onion, sliced Yellow or red onion recommended
  • 2 teaspoons taco seasoning Store-bought or homemade
  • to taste Salt and pepper Adjust according to preference
  • Tortillas, for serving For making tacos or burrito bowls

Method
 

Preparation
  1. Place the chicken, bell pepper, and onion in the slow cooker.
  2. Sprinkle the taco seasoning evenly over the mixture.
  3. Add salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Shred the chicken with two forks before serving.
Serving
  1. Serve in tortillas or over rice/greens for burrito bowls.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze for up to 3 months. Marinate chicken in taco seasoning for extra flavor or add different vegetables for seasoning.
