Preparation
- Preheat your oven to 400°F (200°C).
- Wash the zucchinis and slice them into thin rounds.
- In a bowl, mix the shredded mozzarella, bread crumbs, minced garlic, salt, pepper, and Italian seasoning.
- Lay the zucchini slices on a baking sheet lined with parchment paper.
- Spoon the cheese and bread crumb mixture onto each zucchini slice, pressing down gently.
- Spray or drizzle olive oil over the coated zucchini bites.
Baking
- Bake in the preheated oven for about 15-20 minutes, or until golden and crispy.
- Remove from the oven and let them cool slightly before serving.
Notes
For extra flavor, consider adding some grated Parmesan cheese to the bread crumb mixture or red pepper flakes for a spicy kick. Store leftovers in an airtight container for up to 3 days. To reheat, bake at 350°F (175°C).
