  • 1 lb chicken breast Can use shredded rotisserie chicken for quicker preparation
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth Ensure it's gluten-free if needed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips or chips for serving
  • Avocado, cheese, and cilantro for garnish

Method
 

Preparation
  1. In a crockpot, combine the chicken breast, black beans, corn, diced tomatoes, chicken broth, onion, garlic, cumin, chili powder, salt, and pepper.
  2. Stir to mix all ingredients well.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 4 hours.
  2. Before serving, shred the chicken in the pot using two forks.
Serving
  1. Serve hot, garnished with tortilla strips, avocado, cheese, and cilantro.

Notes

For depth of flavor, add diced bell peppers or jalapeƱos. Adjust seasonings according to taste. For a smoother texture, blend the soup slightly. Stir in a splash of heavy cream or sour cream for added richness.
