  • 2 cups rolled oats
  • 2 cups milk (or non-dairy milk) Use your preferred type of milk.
  • 1 cup diced apples A mix of sweet and tart apples is recommended.
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs For a vegan option, substitute with flaxseed meal mixed with water.
  • 1/4 cup chopped nuts (optional) Walnuts or pecans work well.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine rolled oats, diced apples, brown sugar, cinnamon, vanilla extract, and salt.
  3. In another bowl, whisk together milk and eggs.
  4. Pour the wet mixture into the dry ingredients and mix until combined.
  5. Transfer the mixture to the prepared baking dish, spreading it evenly.
Baking
  1. Bake for 30-35 minutes, or until set and golden brown on top.
  2. Allow to cool slightly, then serve warm. Optionally, sprinkle with nuts before serving.

Notes

Serve warm with yogurt, a splash of milk, maple syrup, or additional fresh fruits. Store leftovers in an airtight container in the refrigerator for up to five days.
