  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt and pepper For seasoning
  • 2 tablespoons olive oil For frying
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice Best when freshly squeezed
  • 1 tablespoon lemon zest Adds citrus aroma
  • 2 tablespoons butter
  • to taste Chopped parsley For garnish

Method
 

Cooking
  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat.
  3. Add the chicken and cook until golden brown on both sides and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the pan and set aside.
  5. In the same skillet, add minced garlic and sauté for about 30 seconds.
  6. Pour in chicken broth and lemon juice, scraping up any brown bits from the bottom of the pan.
  7. Stir in lemon zest and butter until melted and combined.
  8. Return the chicken to the skillet and coat with the sauce.
  9. Serve hot, garnished with chopped parsley.

Notes

Serve alongside rice, mashed potatoes, or a fresh green salad. For extra flavor, consider adding capers or olives. You can also substitute chicken with fish for a lighter option.
