  • 2 medium zucchinis, sliced
  • 1 unit bell pepper, sliced
Seasoning and sauces
  • 2 tablespoons soy sauce Can be replaced with gluten-free soy sauce or tamari.
  • 1 tablespoon olive oil For cooking.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
For serving
  • Cooked rice or noodles For serving with the stir fry.

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Add the sliced chicken to the pan. Season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through.
  3. Add the minced garlic, sliced zucchini, and bell pepper to the pan. Stir well to combine.
  4. Pour the soy sauce over the chicken and vegetables. Stir-fry for another 5-7 minutes, until the vegetables are tender but still crisp.
  5. Serve over cooked rice or noodles.

Notes

This stir fry is best served hot over a bed of fluffy rice or noodles. Garnish with chopped green onions or sesame seeds for an extra touch. You can also serve it with a side of fresh salad or steamed vegetables for a complete meal. To store leftovers, let the stir fry cool completely. Place it in an airtight container and refrigerate for up to three days. Reheat in the microwave or on the stovetop, adding a splash of water or soy sauce to keep it moist.
