  • 1 pound boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 1 large onion, diced
  • 1 tablespoon fajita seasoning Adds flavor to the chicken.
  • 1 cup mozzarella cheese, shredded Can substitute with cheddar or pepper jack.
  • 1 tablespoon olive oil For sautéing.
  • 1 piece lime, juiced For drizzling before baking.
  • 1 piece avocado, sliced To serve on top.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
  4. Add diced chicken and fajita seasoning to the skillet, cooking until the chicken is fully cooked.
  5. Stir in diced tomatoes and season with salt and pepper.
Stuffing and Baking
  1. Stuff the bell peppers with the chicken mixture and top with mozzarella cheese.
  2. Place stuffed peppers in a baking dish, drizzle with lime juice, and bake for 25-30 minutes until the peppers are tender.
Serving
  1. Serve topped with sliced avocado.
