Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Whisk in the eggs and maple syrup until well combined.
- Stir in the baking soda and rolled oats until just incorporated. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and spread it evenly.
Baking
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
