  • 3 medium ripe bananas, mashed Use very ripe bananas for best sweetness.
  • 2 large eggs Can be substituted with applesauce or flaxseed egg.
  • 1/4 cup pure maple syrup Can adjust sweetness to taste.
  • 1 teaspoon baking soda
  • 2 cups old-fashioned rolled oats Quick oats can be used but with a different texture.

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Whisk in the eggs and maple syrup until well combined.
  4. Stir in the baking soda and rolled oats until just incorporated. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
Baking
  1. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
