  • 2 cups rolled oats
  • 1 cup buttermilk can substitute with regular milk and vinegar or lemon juice
  • 3 large eggs can be replaced with flax eggs for vegan option
  • 1/4 cup honey or maple syrup adjust to taste for sweetness
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup apple sauce optional for moisture
  • 1/2 cup nuts or seeds optional for added texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a blender, blend the rolled oats until they form a flour-like consistency.
  3. In a large bowl, combine the oat flour, baking soda, and salt.
  4. In another bowl, beat the eggs, then mix in the buttermilk and honey or maple syrup.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. If using, fold in the apple sauce and nuts or seeds.
  7. Pour the mixture into the prepared loaf pan.
Baking
  1. Bake for 40-45 minutes or until the top is golden brown and a toothpick comes out clean.
  2. Allow to cool before slicing.

Notes

This bread is delicious on its own or served with nut butter, fresh fruits, or yogurt. Store leftovers in an airtight container for up to three days, or freeze for up to three months.
