  • 1 cup almond flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup walnuts, chopped Can be omitted for a nut-free version.
  • 3 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon Can adjust to taste.
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the grated carrots, almond flour, unsweetened applesauce, chopped walnuts, eggs, baking soda, baking powder, cinnamon, nutmeg, salt, and vanilla extract.
  3. Mix until the batter is well combined and smooth.
  4. Pour the batter into the prepared cake pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for 30 minutes, or until a toothpick comes out clean from the center.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve with Greek yogurt or a sprinkle of extra walnuts. For a festive touch, drizzle with sugar-free icing or add a scoop of natural ice cream.
