  • 3/4 cup honey or maple syrup
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon (optional)
  • Fresh fruit or powdered sugar for serving (optional)

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the baking powder, baking soda, salt, and lemon zest (if using).
  4. Gradually add the dry ingredients to the yogurt mixture, mixing until just combined.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm or at room temperature with fresh fruit or powdered sugar. Store wrapped in plastic wrap or foil in the refrigerator for up to five days, or freeze for up to three months. For variations, consider adding spices or chocolate.
