Ingredients
  

Main ingredients
  • 2.5 pounds medium-large head of cauliflower
  • 1 large egg
  • 1/2 cup grated Parmesan cheese or shredded Mozzarella cheese Use either cheese based on preference.
  • 1 teaspoon Italian seasoning
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • as needed Cooking spray For greasing the baking sheet.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the cauliflower by rinsing it, removing the leaves, and processing it into rice-sized pieces in a food processor.
  3. Bake the riced cauliflower for 15 minutes or microwave for 8 minutes, then cool it in a bowl lined with cheesecloth for 10-15 minutes.
  4. Squeeze out the excess moisture until about 1½ cups of water is removed.
  5. Increase the oven temperature to 450°F (232°C).
Mixing and Shaping
  1. In a bowl, mix the drained cauliflower with the egg, cheese, Italian seasoning, salt, and pepper until combined.
  2. Transfer the dough onto the parchment-lined baking sheet and shape it into an 11-inch-wide crust.
Baking
  1. Bake for 20 minutes; flip for additional crispiness if desired before adding toppings.
  2. Add your favorite toppings and bake until the cheese is golden brown.

Notes

Ensure you remove as much moisture as possible from the cauliflower for a crispier crust. Experiment with different cheeses for unique flavors in the crust. Use a pizza stone if you have one for an even better crispy texture.
