Preparation
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the cauliflower by rinsing it, removing the leaves, and processing it into rice-sized pieces in a food processor.
- Bake the riced cauliflower for 15 minutes or microwave for 8 minutes, then cool it in a bowl lined with cheesecloth for 10-15 minutes.
- Squeeze out the excess moisture until about 1½ cups of water is removed.
- Increase the oven temperature to 450°F (232°C).
Mixing and Shaping
- In a bowl, mix the drained cauliflower with the egg, cheese, Italian seasoning, salt, and pepper until combined.
- Transfer the dough onto the parchment-lined baking sheet and shape it into an 11-inch-wide crust.
Baking
- Bake for 20 minutes; flip for additional crispiness if desired before adding toppings.
- Add your favorite toppings and bake until the cheese is golden brown.
Notes
Ensure you remove as much moisture as possible from the cauliflower for a crispier crust. Experiment with different cheeses for unique flavors in the crust. Use a pizza stone if you have one for an even better crispy texture.
