  • 4 pieces boneless, skinless chicken breasts Season with salt and pepper before baking.
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) condensed French onion soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) chicken broth Can be substituted with vegetable broth or water.
  • 1 packet (1 oz) dry onion soup mix
  • 2 tablespoons unsalted butter, melted
  • 1 cup shredded mozzarella cheese For topping.
  • 1 cup shredded cheddar cheese For topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine uncooked rice, condensed French onion soup, cream of mushroom soup, and chicken broth; mix well.
  3. Pour half the mixture into a greased 9x13 inch baking dish.
  4. Season the chicken breasts with salt and pepper; place on top of the rice mixture.
  5. Pour the remaining rice mixture over the chicken and sprinkle with dry onion soup mix.
  6. Cover with aluminum foil and bake for 1 hour.
  7. Remove foil, add mozzarella and cheddar cheese on top, then bake uncovered for an additional 10-15 minutes until bubbly and golden brown.

Notes

Serve hot and pair with a simple salad or steamed veggies. Great for potlucks; can be made ahead and stored in the fridge.
