Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine uncooked rice, condensed French onion soup, cream of mushroom soup, and chicken broth; mix well.
- Pour half the mixture into a greased 9x13 inch baking dish.
- Season the chicken breasts with salt and pepper; place on top of the rice mixture.
- Pour the remaining rice mixture over the chicken and sprinkle with dry onion soup mix.
- Cover with aluminum foil and bake for 1 hour.
- Remove foil, add mozzarella and cheddar cheese on top, then bake uncovered for an additional 10-15 minutes until bubbly and golden brown.
Notes
Serve hot and pair with a simple salad or steamed veggies. Great for potlucks; can be made ahead and stored in the fridge.
