French Onion Meatballs

Ingredients
  

Meatball Mixture
  • 1 pound ground beef Use fresh or lean ground beef.
  • 1/2 cup breadcrumbs Fresh breadcrumbs are recommended.
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
Onion and Broth Mixture
  • 2 large onions, sliced Take the time to caramelize for best flavor.
  • 1 cup beef broth Consider adding white wine for extra flavor.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
Topping
  • 1/2 cup Swiss cheese, shredded Can substitute with other cheeses like cheddar or mozzarella.

Method
 

Preparation of Meatballs
  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Shape into meatballs.
Cooking
  1. In a crock pot, add sliced onions and beef broth. Stir in Worcestershire sauce and thyme.
  2. Place meatballs on top of the onion mixture.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. During the last 30 minutes, top meatballs with Swiss cheese. Serve warm.

Notes

These meatballs are perfect served warm with crusty bread or over mashed potatoes. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
