Preparation
- In a blender, combine the mangoes, coconut milk, honey (or sugar), and lime juice.
- Blend until smooth.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 4 hours or until solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds before pulling them out.
Notes
Store the popsicles in the freezer for up to 6 weeks. Keep them in the molds for easy access or transfer to an airtight container to prevent freezer burn.
