  • 2 tablespoons honey or sweetener Optional; adjust to taste based on preference for sweetness.
  • 1 tablespoon lemon juice
  • 1 pinch salt

Method
 

Preparation
  1. In a blender, combine the fresh watermelon, yogurt, honey (if using), lemon juice, and salt. Blend until smooth.
  2. Pour the mixture into a lined baking dish or mold.
  3. Freeze for at least 4-6 hours or until solid.
  4. Remove from the freezer and let sit for a few minutes to soften before slicing into bars.

Notes

These bars can be served straight from the freezer or softened slightly. Store in an airtight container with parchment paper between layers to prevent sticking. They will keep well for about a month.
