Ingredients
  

For the Cookies
  • 1 cup salted butter (cut into cubes) Must be at room temperature
  • 1 cup granulated sugar
  • 1 whole egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 teaspoons baking powder
  • 3 cups all-purpose flour See notes below before measuring
For the Frosting
  • 1/2 cup salted butter (at room temperature)
  • 8 ounces cream cheese (at room temperature)
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract
For Topping
  • assorted Fresh fruit: berries, kiwi, banana, mandarin oranges, etc. Use your favorites for variety

Method
 

Make the Cookies
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the cubed salted butter and granulated sugar until light and fluffy.
  3. Add the whole egg, vanilla extract, and almond extract, mixing well.
  4. In another bowl, whisk together the baking powder and flour.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Scoop out tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper.
  7. Flatten them slightly and bake for 10-12 minutes until the edges are lightly golden.
  8. Let them cool completely.
Make the Frosting
  1. In a bowl, beat together the room-temperature butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Assemble the Cookies
  1. Once the cookies are cool, spread a generous layer of frosting on each cookie.
  2. Top with your chosen fresh fruits, arranging them in colorful patterns.

Notes

Make sure to use a variety of fruits for a colorful presentation. Chill the cookie dough if it spreads too much while baking. Store in an airtight container in the fridge for up to 2-3 days.
